Foodie Wednesdays - Hummus!
In my search for healthy recipes, I stumbled on Home Cyn Home's this homemade from scratch hummus recipe.
Hummus is a Mediterranean dip made from chickpeas (garbanzo beans/kabuli chana). It's healthy unlike other spreads/dips made from cheese and mayonnaise.
I followed the above linked recipe with just few minor tweaks.
Ingredients:
Chickpeas - 1 cup
Dry red chillies - 2
Garlic - 3 or 4 cloves
Sesame seeds - 4 tbsp
Oil - for tahini
Olive oil - for drizzling on top
Salt to taste
Water as required
Water as required
Steps:
1. Soak chickpeas overnight and boil in pressure cooker (4-5 whistles). Check if its soft and cooked. If not, then cook for few whistles more.
2. Grind sesame seeds with little oil (2-3 tbsp) to make tahini. Now, tahini is suppose to look like a runny peanut butter. But as I was making it only for this batch, I didn't bother to add more oil to get the 'runny' consistency and grinded it till it was a fine paste.
3. Now to the sesame paste, add boiled beans, salt, chillies, and garlic and grind till it is a smooth paste. Add water if required.
4. Put it in a bowl and drizzle olive oil generously. Serve with pita bread, vegetables sticks, and/or focaccia bread.
I was happily surprised that it tasted exactly like fancy restaurant style hummus.
Try it. Enjoy!
